Ingredients

– 1 cup canned pumpkin puree

– 1/2 cup granulated sugar

– 2 large eggs

Instructions

1. – Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.

2. – In a large bowl, whisk together the pumpkin puree, sugar, and eggs until well combined.

3. – In a separate bowl, whisk together the flour, baking soda, and pumpkin pie spice.

4. – Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.

5. – Spoon the batter evenly into the prepared muffin cups, filling them about 3/4 full.

6. – Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

7. – Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
