Description

Ingredients

– 1 cup watermelon, diced into small cubes

– 1 cup mochi flour (or sweet rice flour)

– 1/4 cup granulated sugar

– 2 tablespoons water


Instructions

1. – In a microwave-safe bowl, combine the diced watermelon, mochi flour, and sugar. Stir until well mixed.

2. – Microwave the mixture for 1 minute, then remove and stir. Repeat the microwaving in 30-second intervals, stirring after each, until the mixture becomes sticky and dough-like.

3. – Lightly dust a clean work surface with additional mochi flour. Transfer the hot mochi dough to the work surface and knead briefly until smooth.

4. – Divide the dough into 12 equal pieces. Roll each piece into a small ball using your hands.

5. – Enjoy the watermelon mochi immediately, or store in an airtight container in the refrigerator for up to 3 days.

Notes

For a creamier texture, you can add a tablespoon of cream cheese or mascarpone to the mochi dough. The mochi can also be coated in toasted coconut or a dusting of powdered sugar for an extra special touch.
