Ingredients
– 1 lb beef stew meat, cut into 1-inch cubes
– 2 tablespoons olive oil
– 1 large onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 medium potatoes, peeled and diced
– 4 cups beef broth
– 2 cups water
– 1 bay leaf
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5 minutes.
2. – Add the onion, carrots, and celery to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
3. – Pour in the beef broth and water. Add the bay leaf, thyme, and parsley. Bring the soup to a boil.
4. – Reduce the heat to low, cover, and simmer for 30 minutes. Add the diced potatoes and continue to simmer for 20-25 minutes, or until the potatoes are tender and the beef is cooked through.
5. – Season with salt and pepper to taste.
