Ingredients
– 3 lbs Yukon Gold potatoes, scrubbed
– 1/4 cup olive oil
– 4 cloves garlic, minced
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. – Preheat the oven to 425°F.
2. – Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
3. – Drain the potatoes and let them cool slightly. Using a potato masher or the back of a fork, gently smash the potatoes, leaving some chunks.
4. – In a small bowl, combine the olive oil, garlic, thyme, rosemary, salt, and pepper. Pour the seasoned oil over the smashed potatoes and gently toss to coat.
5. – Spread the potatoes in a single layer on a large baking sheet. Bake for 20-25 minutes, or until the edges are crispy and golden brown.
