Ingredients
– 1 cup canned pumpkin puree
– 1 cup all-purpose flour
– 3/4 cup brown sugar
– 1/2 cup plant-based milk
– 1/3 cup vegetable oil
– 1 teaspoon baking powder
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
Instructions
1. – Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
2. – In a large bowl, whisk together the pumpkin puree, plant-based milk, and vegetable oil until well combined.
3. – In a separate bowl, whisk together the flour, brown sugar, baking powder, cinnamon, ginger, nutmeg, and salt.
4. – Add the dry ingredients to the wet ingredients and stir until just combined, being careful not to overmix.
5. – Pour the batter into the prepared loaf pan and smooth the top.
6. – Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
