Ingredients

– 1 cup ube puree

– 1 cup mochi flour

– 1/2 cup all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 2 eggs

– 1 cup milk

– 2 tablespoons sugar

– 1/4 cup melted butter


Instructions

1. – Preheat your waffle iron to medium-high heat.

2. – In a large bowl, whisk together the ube puree, mochi flour, all-purpose flour, baking powder, and salt.

3. – In a separate bowl, beat the eggs, then stir in the milk and sugar.

4. – Slowly pour the wet ingredients into the dry ingredients and whisk until just combined, being careful not to overmix.
