Ingredients

– 1 cup all-purpose flour

– 1/2 cup unsweetened cocoa powder

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 1 large egg

– 1 teaspoon vanilla extract

– 1/2 cup ube puree or mashed ube


Instructions

1. 1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. 2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

3. 3. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.

4. 4. Beat in the egg and vanilla extract until well combined.

5. 5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the ube puree or mashed ube.

6. 6. Scoop the dough by the tablespoonful onto the prepared baking sheet, spacing them about 2 inches apart.

7. 7. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.

8. 8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For an even richer flavor, you can add a pinch of cinnamon or a teaspoon of instant coffee powder to the batter. These cookies can be stored in an airtight container at room temperature for up to 5 days.
