Description

Ingredients

– 1 (15oz) can white beans, drained and rinsed

– 1 tablespoon olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 1 teaspoon dried rosemary

– 1 teaspoon dried thyme

– 1/4 cup grated Parmesan cheese, plus more for serving

– Salt and pepper to taste


Instructions

1. – In a large pot, heat the olive oil over medium heat.

2. – Add the diced onion and sauté for 2-3 minutes until translucent.

3. – Stir in the minced garlic and cook for an additional minute.

4. – Pour in the broth and add the drained and rinsed white beans, rosemary, and thyme.

5. – Bring the soup to a simmer and cook for 5-7 minutes, until the beans are heated through.

6. – Using an immersion blender, puree a portion of the soup to create a creamy texture.

7. – Stir in the grated Parmesan cheese and season with salt and pepper to taste.

8. – Ladle the soup into bowls and top with additional Parmesan cheese, if desired.

Notes

For a thicker soup, puree more of the beans. Adjust seasoning to your taste preferences. This soup also freezes well for up to 3 months.
