Ingredients

– 3 lbs potatoes, peeled and cubed

– 1/4 cup chopped parsley

– Salt and pepper to taste


Instructions

1. – Bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.

2. – Drain the potatoes and let them cool slightly.

3. – In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, cumin, and paprika.
