Ingredients
– 8 oz dried pasta (such as penne or fusilli)

– 1 (14oz) can diced tomatoes
– 1 cup beef or chicken broth
– 1 cup shredded mozzarella cheese
– 1/4 cup chopped fresh parsley
– Salt and pepper to taste
Instructions
1. 1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. 2. In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté for 3-4 minutes until translucent.
