Ingredients

– 1 head of green cabbage, chopped

– 3 carrots, peeled and chopped

– 1 onion, diced

– 3 cloves of garlic, minced

– 2 cans of diced tomatoes

– 4 cups of vegetable or chicken broth

– 2 tablespoons of tomato paste

– 1 teaspoon of paprika

– 1 teaspoon of cumin

– 1 teaspoon of dried oregano

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. – Heat a large pot or Dutch oven over medium heat and add a tablespoon of olive oil.

2. – Sauté the onion and garlic until fragrant, about 2-3 minutes.

3. – Add the chopped cabbage and carrots to the pot and cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.

4. – Stir in the diced tomatoes, tomato paste, paprika, cumin, and oregano. Season with salt and pepper to taste.

5. – Pour in the broth and bring the mixture to a boil.

6. – Reduce the heat to low, cover the pot, and let the stew simmer for 20-25 minutes, or until the cabbage and carrots are tender.

7. – Adjust seasoning if necessary and garnish with chopped parsley before serving.

Notes
