This Turkey Taco Soup is a comforting and flavorful one-pot meal that’s ready in just 30 minutes. Packed with ground turkey, taco seasonings, beans, corn, and your favorite taco toppings, it’s a family-friendly dinner the whole crew will love.
Ingredients
– 1 lb ground turkey
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tbsp taco seasoning
– 4 cups chicken or vegetable broth
– 1 (15 oz) can black beans, drained and rinsed
– 1 (15 oz) can pinto beans, drained and rinsed
– 1 (15 oz) can corn, drained
– 1 (14.5 oz) can diced tomatoes
– Salt and pepper to taste
– Toppings: shredded cheese, diced avocado, chopped cilantro, crushed tortilla chips
Instructions
1. – In a large pot or Dutch oven, cook the ground turkey over medium-high heat until browned, 5-7 minutes, making sure to crumble the turkey as it cooks.
2. – Add the diced onion and minced garlic. Cook for 2-3 minutes until fragrant.
3. – Stir in the taco seasoning and cook for 1 minute.
4. – Pour in the broth and add the black beans, pinto beans, corn, and diced tomatoes. Bring to a simmer and let cook for 15-20 minutes, stirring occasionally, until the flavors have melded.
5. – Season with salt and pepper to taste.
6. – Ladle the soup into bowls and top with shredded cheese, diced avocado, chopped cilantro, and crushed tortilla chips.
Notes
– For a creamier texture, you can blend a portion of the soup before serving.
– Customize the toppings to your liking – try sour cream, jalapeños, or crushed Doritos.
