Ingredients

– 2 lbs boneless, skinless turkey breast, cut into 1-inch cubes

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 4 cups turkey or chicken broth

– 2 cups water

– 2 bay leaves

– 1 tsp dried thyme

– 1 tsp dried parsley

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, sauté the onion, carrots, and celery in a bit of olive oil over medium heat until softened, about 5-7 minutes.

2. – Add the turkey cubes, broth, water, bay leaves, thyme, and parsley. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the turkey is cooked through and the vegetables are tender.

3. – Remove the bay leaves. Season the soup with salt and pepper to taste.

4. – Serve hot, garnished with additional parsley if desired. Enjoy with a slice of crusty bread.

Notes

– For a thicker soup, you can mash some of the vegetables against the side of the pot.

– Substitute chicken for the turkey if desired.

– Add in other vegetables like potatoes, green beans, or spinach for extra nutrition.
