Description

These Tuna Salad Cucumber Boats are a delicious, low-carb alternative to traditional tuna salad. Crisp cucumber halves are filled with a creamy, flavorful tuna mixture for a refreshing and satisfying snack or light lunch.


Ingredients

– 2 (5 oz) cans tuna, drained

– 1/4 cup mayonnaise

– 2 tablespoons diced celery

– 2 tablespoons diced onion

– 1 tablespoon fresh lemon juice

– 1 teaspoon dried dill (or 1 tablespoon fresh, chopped)

– Salt and pepper to taste

– 2 large English cucumbers, halved lengthwise and seeded


Instructions

1. 1. In a medium bowl, mix together the drained tuna, mayonnaise, celery, onion, lemon juice, and dill. Season with salt and pepper to taste.
