Description

Ingredients

– 8 oz cremini mushrooms, sliced

– 2 tbsp truffle oil

– 2 cloves garlic, minced

– 1 cup heavy cream

– 1 cup shredded Gruyere cheese

– 1/4 cup grated Parmesan cheese

– 1 tsp fresh thyme leaves

– Salt and pepper to taste

– 12 oz penne pasta


Instructions

1. – Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

2. – In a large skillet, heat the truffle oil over medium-high heat. Add the sliced mushrooms and sauté for 5-7 minutes, until mushrooms are browned and tender.

3. – Reduce heat to medium and add the minced garlic. Cook for 1 minute, until fragrant.

4. – Pour in the heavy cream and stir to combine. Bring the mixture to a simmer.

5. – Remove from heat and stir in the shredded Gruyere and Parmesan cheeses until melted and smooth.

6. – Add the cooked penne pasta and fresh thyme to the skillet, tossing to coat the pasta in the creamy mushroom sauce.

7. – Season with salt and pepper to taste.

8. – Serve immediately, garnished with extra thyme if desired.

Notes

For a richer flavor, use a combination of wild mushrooms like shiitake, oyster, and cremini. You can also add a sprinkle of toasted breadcrumbs or crushed hazelnuts for extra texture.
