Description

Ingredients

– 1 cup (226g) unsalted butter, softened

– 1 cup (200g) granulated sugar

– 1 egg

– 1/2 cup (120ml) honey, plus more for drizzling

– 1 teaspoon vanilla extract

– 3 cups (375g) all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground cloves

– 1/4 teaspoon ground allspice

– 1 cup (100g) finely chopped walnuts


Instructions

1. – Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper.

2. – In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. – Beat in the egg, 1/2 cup of honey, and vanilla extract until well combined.

4. – In a separate bowl, whisk together the flour, baking powder, cinnamon, cloves, and allspice.

5. – Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

6. – Stir in the chopped walnuts.

7. – Roll the dough into small, oval-shaped cookies and place them on the prepared baking sheet, spacing them about 1 inch apart.

8. – Bake for 18-20 minutes, or until the cookies are lightly golden.

9. – Remove the cookies from the oven and immediately drizzle them with additional honey while they are still warm.

10. – Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

– For a more authentic taste, use Greek thyme honey if available.

– You can substitute other nuts, such as almonds or pistachios, in place of the walnuts.

– These cookies can be stored in an airtight container for up to 1 week.
