Ingredients
– 1/2 cup chia seeds
– 1 cup brewed coffee, cooled
– 1/4 cup mascarpone cheese
– 2 tablespoons cocoa powder
– 2 tablespoons honey (or maple syrup)
– 1 teaspoon vanilla extract
– Pinch of salt
Instructions
1. 1. In a medium bowl, whisk together the chia seeds and cooled coffee until well combined.
2. 2. Cover and refrigerate for at least 30 minutes, stirring occasionally, until the chia seeds have thickened and formed a pudding-like consistency.
3. 3. In a separate bowl, beat the mascarpone cheese until smooth and creamy.
4. 4. Add the cocoa powder, honey, vanilla, and a pinch of salt to the mascarpone and mix until well incorporated.
