Ingredients
– 24 ounces cream cheese, softened
– 1 cup granulated sugar
– 4 large eggs
– 1 teaspoon vanilla extract
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger
– 1 1/2 cups graham cracker crumbs
– 6 tablespoons unsalted butter, melted
Instructions
1. – Preheat the oven to 325°F (165°C).
2. – In a large bowl, beat the cream cheese with a hand mixer until smooth and creamy.
3. – Gradually add the sugar and beat until well combined, scraping down the sides as needed.
4. – Add the eggs one at a time, beating well after each addition.
5. – Stir in the vanilla, cinnamon, nutmeg, and ginger until evenly distributed.
6. – In a separate bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
7. – Pour the cheesecake batter over the graham cracker crust and smooth the top.
8. – Bake for 55-60 minutes, or until the center is almost set.
9. – Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
10. – Remove the cheesecake from the oven and let it cool completely on a wire rack.
11. – Refrigerate the cheesecake for at least 4 hours or overnight before serving.
Notes
For best results, use room temperature ingredients. You can also add a dollop of whipped cream or a drizzle of caramel sauce to serve.
