Description

Ingredients

– 1 lb ground beef or turkey

– 2 tablespoons fish sauce

– 2 tablespoons brown sugar

– 1 tablespoon soy sauce

– 1 tablespoon lime juice

– 1-2 Thai chiles, finely chopped

– 2 cloves garlic, minced

– 1 teaspoon ground ginger

– 1/4 cup chopped cilantro, plus more for garnish

– 12 small slider buns, toasted

– Lime wedges for serving


Instructions

1. 1. In a large skillet over medium-high heat, cook the ground meat until browned and crumbled, 5-7 minutes.

2. 2. Stir in the fish sauce, brown sugar, soy sauce, lime juice, Thai chiles, garlic, and ginger. Simmer for 2-3 minutes, until the sauce has thickened slightly.

3. 3. Remove from heat and stir in the cilantro.

4. 4. Divide the Thai sloppy joe mixture evenly among the toasted slider buns.

5. 5. Serve immediately, garnished with additional cilantro and lime wedges.

Notes

For a milder version, use only 1 Thai chile. For a spicier kick, add an extra chile or two. The sloppy joe mixture can be made in advance and reheated before serving.
