Ingredients
– 1 cup uncooked quinoa
– 1 cup shredded cabbage
– 1 cup diced bell pepper

– 1/4 cup chopped cilantro
– 2 tablespoons chopped peanuts
– Dressing:
– 1/4 cup creamy peanut butter
– 2 tablespoons rice vinegar
– 2 tablespoons soy sauce
– 1 tablespoon honey
– 1 tablespoon lime juice
– 1 teaspoon grated ginger
– 1/4 teaspoon red pepper flakes (optional)
Instructions
1. 1. Cook the quinoa according to package instructions. Fluff with a fork and let cool slightly.
