Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 1 tbsp vegetable oil

– 2 tbsp green curry paste

– 1 cup coconut milk

– 1 tbsp fish sauce

– 1 tsp brown sugar

– Juice of 1 lime

– 1/4 cup chopped fresh cilantro

– 4 large tortillas


Instructions

1. – In a large skillet, heat the vegetable oil over medium-high heat.

2. – Add the cubed chicken and sauté until lightly browned, about 5 minutes.

3. – Stir in the green curry paste and cook for 1 minute, until fragrant.

4. – Pour in the coconut milk, fish sauce, and brown sugar. Bring to a simmer and cook for 5 minutes, until the sauce has thickened and the chicken is cooked through.

5. – Remove from heat and stir in the lime juice and chopped cilantro.

6. – Warm the tortillas according to package instructions.

7. – Spoon the Thai green curry chicken mixture onto the center of each tortilla. Fold the sides over the filling and roll up tightly to create a burrito.

8. – Serve the Thai Green Curry Chicken Burritos immediately, garnished with additional cilantro if desired.

Notes

For a spicier burrito, add more green curry paste. You can also customize the fillings by adding diced vegetables, such as bell peppers or snap peas.
