Ingredients
– 4 boneless, skinless chicken breasts
– 1 cup all-purpose flour
– 2 eggs, beaten
– 2 cups panko breadcrumbs
– 1 tsp garlic powder
– 1 tsp ground ginger
– 1 tsp ground coriander
– 1 tsp ground cumin
– 1/2 tsp cayenne pepper
– 1 cup shredded cabbage
– 1/4 cup shredded carrots
– 2 tbsp rice vinegar
– 1 tbsp lime juice
– 1 tbsp honey
– 1/4 cup mayonnaise
– 2 tbsp sriracha
– 4 brioche buns, toasted
Instructions
1. 1. Pound the chicken breasts to an even thickness, about 1/2 inch.
2. 2. In a shallow dish, combine the flour, garlic powder, ginger, coriander, cumin, and cayenne.
3. 3. In a second shallow dish, place the beaten eggs. In a third dish, add the panko breadcrumbs.
4. 4. Dredge the chicken in the flour mixture, then dip in the egg, and finally coat with the panko breadcrumbs.
5. 5. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat. Fry the breaded chicken for 3-4 minutes per side, until golden brown and cooked through.
6. 6. In a small bowl, combine the shredded cabbage, carrots, rice vinegar, lime juice, and honey. Mix well and set aside.
7. 7. In another bowl, mix the mayonnaise and sriracha to make the spicy mayo.
8. 8. Assemble the sandwiches by placing a fried chicken patty on each toasted bun, then top with the slaw and a generous drizzle of the sriracha mayo.
Notes
For a spicier sandwich, increase the amount of sriracha in the mayo. You can also try adding thinly sliced cucumbers or jalapenos for extra crunch and heat.
