Ingredients

– 1 cup red lentils, rinsed

– 1 (13.5 oz) can full-fat coconut milk

– 4 cups vegetable or chicken broth

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tbsp grated fresh ginger

– 1 tsp ground cumin

– 1 tsp ground coriander

– 1/2 tsp ground turmeric

– 1/4 tsp cayenne pepper (or to taste)

– Salt and pepper to taste

– Chopped fresh cilantro for garnish


Instructions

1. 1. In a large pot, sauté the onion, garlic, and ginger in a bit of oil over medium heat until fragrant, about 2-3 minutes.
