Description

These Sweet & Spicy Smashed Sweet Potatoes are a delightful comfort food side dish that combines the natural sweetness of roasted sweet potatoes with a kick of spice. They’re easy to make and the perfect accompaniment to any meal.


Ingredients

– 3 lbs sweet potatoes, peeled and cut into 1-inch cubes

– 2 tbsp olive oil

– 1 tsp smoked paprika

– 1 tsp garlic powder

– 1/2 tsp cayenne pepper

– 1/2 tsp salt

– 1/4 tsp black pepper

– 2 tbsp unsalted butter, softened

– 2 tbsp chopped fresh parsley


Instructions

1. 1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. 2. In a large bowl, toss the sweet potato cubes with olive oil, smoked paprika, garlic powder, cayenne, salt, and black pepper until evenly coated.

3. 3. Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet.

4. 4. Roast for 25-30 minutes, stirring halfway, until the sweet potatoes are fork-tender and lightly browned.

5. 5. Remove the sweet potatoes from the oven and use a potato masher or fork to gently smash them, leaving some chunks.

6. 6. Stir in the softened butter until melted and combined.

7. 7. Garnish with fresh chopped parsley and serve hot.

Notes

For extra flavor, try adding a sprinkle of crumbled feta or grated Parmesan cheese. You can also adjust the spice level by increasing or decreasing the amount of cayenne pepper.
