Description

Indulge in the rich, velvety goodness of this easy-to-make Sweet Potato Soup. With just a few simple ingredients, you can create a comforting and flavorful dish that’s perfect for cozy nights.

Ingredients

– 3 medium sweet potatoes, peeled and cubed

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups vegetable broth

– 1 cup heavy cream

– 1 tsp ground cumin

– 1/2 tsp ground cinnamon

– Salt and pepper to taste

Instructions

1. 1. Preheat your oven to 400°F (200°C). Spread the cubed sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.

2. 2. In a large pot, sauté the diced onion and minced garlic in a drizzle of olive oil over medium heat until fragrant and translucent, about 5 minutes.

3. 3. Add the roasted sweet potatoes, vegetable broth, heavy cream, cumin, and cinnamon to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.

4. 4. Using an immersion blender or a regular blender, puree the soup until smooth and creamy.

5. 5. Season with salt and pepper to taste.

6. 6. Serve the Sweet Potato Soup hot, garnished with a swirl of sour cream, chopped chives, or a sprinkle of toasted pumpkin seeds.

Notes

– For a thicker soup, let it simmer for a few extra minutes or add a small amount of cornstarch or flour. – Experiment with different spices like ginger, nutmeg, or cayenne for added depth of flavor. – Store any leftover soup in an airtight container in the refrigerator for up to 4 days.
