Description

Ingredients

– 3 pounds sweet potatoes, peeled and cubed

– 4 eggs, separated

– 1/2 cup milk

– 1/4 cup unsalted butter, melted

– 1/2 cup granulated sugar

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt


Instructions

1. – Preheat oven to 350°F. Grease a 9×13-inch baking dish.

2. – In a large pot, cover the sweet potato cubes with water and bring to a boil. Cook until tender, about 15 minutes. Drain and mash the sweet potatoes until smooth.

3. – In a large bowl, beat the egg yolks. Stir in the mashed sweet potatoes, milk, melted butter, sugar, cinnamon, nutmeg, and salt until well combined.

4. – In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the sweet potato mixture.

5. – Transfer the mixture to the prepared baking dish. Bake for 30-35 minutes, until puffed and lightly browned on top.

6. – Serve warm and enjoy!

Notes

For a richer flavor, try adding a tablespoon of vanilla extract to the sweet potato mixture. You can also sprinkle the top with additional cinnamon or a dusting of powdered sugar before serving.
