Ingredients

– 1 lb Italian sausage, casings removed

– 3 cups cubed sweet potatoes

– 1 onion, diced

– 2 cloves garlic, minced

– 1 cup heavy cream

– 1/4 cup maple syrup

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. 1. Preheat oven to 375°F.

2. 2. In a large skillet, cook the sausage over medium heat, breaking it up as it cooks, until browned, about 5-7 minutes.

3. 3. Add the sweet potatoes, onion, and garlic to the skillet. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.

4. 4. In a small bowl, whisk together the heavy cream, maple syrup, thyme, salt, and pepper.

5. 5. Transfer the sausage and vegetable mixture to a 9×13 baking dish. Pour the cream mixture over the top and stir to combine.

6. 6. Bake for 30-35 minutes, until the sweet potatoes are tender and the casserole is bubbly.

Notes

For a creamier casserole, add an extra 1/4 cup of heavy cream. You can also substitute diced butternut squash for the sweet potatoes. Garnish with chopped fresh thyme or parsley before serving.
