Ingredients
– 2 cups all-purpose flour
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 2 cups mixed fresh fruit (such as strawberries, kiwi, blueberries, mandarin oranges)
– 1/2 cup fruit preserves or jelly
Instructions
1. 1. Preheat oven to 350°F. Grease a 12-inch round pizza pan or rimmed baking sheet.
2. 2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla.
3. 3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
4. 4. Press the dough evenly into the prepared pan, going about 1 inch up the sides.
5. 5. Bake for 18-20 minutes, until the crust is lightly golden. Allow to cool completely.
6. 6. Arrange the fresh fruit over the cooled crust in a decorative pattern.
7. 7. In a small saucepan, heat the fruit preserves over low heat until melted and smooth. Drizzle the glaze evenly over the fruit.
8. 8. Refrigerate the pizza for at least 2 hours before serving to allow the glaze to set.
