Ingredients
– 2 cups all-purpose flour
– 1 teaspoon salt
– 1 cup unsalted butter, chilled and cubed
– 1/4 cup ice water
– 4 cups fresh strawberries, hulled and sliced
– 1 cup granulated sugar
– 2 tablespoons cornstarch
– 1 tablespoon lemon juice
– 1 egg, beaten with 1 tablespoon water for egg wash
Instructions
1. 1. In a large bowl, combine the flour and salt. Cut in the chilled butter using a pastry cutter or two forks until the mixture resembles coarse crumbs. Gradually add the ice water, mixing just until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
2. 2. Preheat the oven to 375°F. Grease a 9×13-inch baking pan.
3. 3. In a medium bowl, toss the sliced strawberries with the sugar, cornstarch, and lemon juice.
4. 4. Roll out one disc of dough to fit the bottom of the prepared baking pan. Transfer the dough to the pan and press it into the bottom and up the sides.
5. 5. Spread the strawberry filling evenly over the dough.
6. 6. Roll out the remaining dough disc to fit the top of the pan. Place the dough over the filling and crimp the edges to seal.
7. 7. Brush the top of the dough with the egg wash.
8. 8. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
9. 9. Allow the slab pie to cool completely before slicing and serving.
Notes
Serve this Strawberry Pop Tart Slab Pie with a scoop of vanilla ice cream for an extra special treat. You can also use a variety of berries, such as raspberries or blackberries, in place of the strawberries.
