Description

Ingredients

– 1 cup (200g) chopped dates

– 1 cup (240ml) boiling water

– 1/2 cup (115g) unsalted butter, softened

– 3/4 cup (150g) granulated sugar

– 2 large eggs

– 1 3/4 cups (210g) all-purpose flour

– 1 teaspoon baking soda


Instructions

1. – Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) baking dish.

2. – In a bowl, pour the boiling water over the chopped dates and let sit for 10 minutes to soften.

3. – In a separate bowl, cream the butter and sugar together until light and fluffy.

4. – Beat in the eggs one at a time, then stir in the date mixture.

5. – In a third bowl, whisk together the flour and baking soda. Fold the dry ingredients into the wet ingredients until just combined.

6. – Pour the batter into the prepared baking dish and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.

7. – Serve warm with a drizzle of toffee sauce and a scoop of vanilla ice cream, if desired.

Notes

For a richer flavor, use brown sugar instead of granulated. Top with chopped toasted pecans or walnuts for extra crunch.
