Description

Sticky BBQ Chicken Zucchini Boats are a delicious and easy-to-make low-carb dinner that’s perfect for busy weeknights. Hollowed-out zucchini halves are filled with a flavorful mixture of shredded chicken in a sweet and tangy BBQ sauce, then topped with melted cheese for a satisfying and healthy meal.


Ingredients

– 4 medium zucchini, halved lengthwise

– 1 lb boneless, skinless chicken breasts

– 1 cup BBQ sauce

– 1 cup shredded cheddar cheese

– Salt and pepper to taste


Instructions

1. – Preheat oven to 375°F.

2. – Use a spoon to scoop out the flesh from the center of each zucchini half, leaving a 1/4-inch border. Chop the scooped-out zucchini flesh and set aside.

3. – In a bowl, shred the chicken breasts using two forks.

4. – Add the chopped zucchini flesh, BBQ sauce, and a pinch of salt and pepper to the shredded chicken. Stir to combine.

5. – Arrange the zucchini boats on a baking sheet. Spoon the chicken mixture into each zucchini boat, then top with shredded cheddar cheese.

6. – Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
