Ingredients
– 6 cups mixed greens (such as romaine, spinach, and cabbage)
– 1 cup shredded carrots
– 1 cup thinly sliced cucumber
– 1 cup thinly sliced red bell pepper
– 1/2 cup chopped fresh mint
– 1/2 cup chopped fresh cilantro
– 2 tablespoons toasted sesame seeds
– For the Spicy Ginger Dressing:
– 1/4 cup rice vinegar
– 2 tablespoons soy sauce
– 1 tablespoon honey
– 1 tablespoon freshly grated ginger
– 1 teaspoon sesame oil
– 1/4 teaspoon red pepper flakes (or more to taste)
– 1/4 cup olive oil
Instructions
1. – In a large salad bowl, combine the mixed greens, carrots, cucumber, bell pepper, mint, and cilantro.
2. – In a small bowl, whisk together the rice vinegar, soy sauce, honey, grated ginger, sesame oil, and red pepper flakes. Slowly drizzle in the olive oil while whisking constantly to emulsify the dressing.
3. – Pour the ginger dressing over the salad and toss gently to coat.
4. – Sprinkle the toasted sesame seeds over the top.
5. – Serve immediately and enjoy!
Notes
– For a heartier meal, add cooked shrimp, grilled chicken, or tofu.
– This salad is also delicious with a sprinkle of crushed peanuts or sliced almonds.
