Ingredients

– 3 cups all-purpose flour

– 1 teaspoon salt

– 1 tablespoon sugar

– 1 package (2 1/4 teaspoons) active dry yeast

– 1 cup warm milk

– 1/4 cup unsalted butter, melted

– 2 cups fresh spring greens (such as spinach, kale, or Swiss chard), finely chopped

– 1 egg, beaten


Instructions

1. – In a large bowl, combine the flour, salt, sugar, and yeast. Stir in the warm milk and melted butter until a shaggy dough forms.

2. – Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.

3. – Place the dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.

4. – Punch down the dough and roll it out into a large rectangle, about 1/4 inch thick.

5. – Spread the chopped spring greens evenly over the dough, leaving a 1-inch border.

6. – Cut the dough into 4 equal strips. Stack the strips on top of each other and cut them into 4 more equal pieces, creating 16 small squares.

7. – Arrange the squares in a greased 9-inch round baking pan, creating a star shape. Cover and let rise for 30 minutes.

8. – Preheat the oven to 375°F (190°C).

9. – Brush the top of the bread with the beaten egg.

10. – Bake for 25-30 minutes, or until the top is golden brown.

11. – Remove from the oven and let cool for 10 minutes before serving.

Notes

– Feel free to experiment with different types of greens, such as spinach, kale, or Swiss chard.
