Ingredients

– 2 tablespoons olive oil

– 3 cloves garlic, minced

– 1 (14-ounce) can artichoke hearts, drained and chopped

– 4 cups vegetable broth

– 4 cups fresh spinach, chopped

– 1 teaspoon dried thyme

– 1/2 teaspoon dried oregano

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, heat the olive oil over medium heat.

3. – Add the drained and rinsed white beans, chopped artichoke hearts, vegetable broth, chopped spinach, dried thyme, and dried oregano.
