Ingredients
– 16 oz white button mushrooms, stems removed and finely chopped
– 1 lb hot Italian sausage, casings removed
– 4 oz cream cheese, softened
– 1/2 cup grated parmesan cheese
– 1/4 cup panko breadcrumbs
– 2 cloves garlic, minced
– 1 tsp dried parsley
– 1/4 tsp red pepper flakes (optional, for extra heat)
– Salt and black pepper to taste
Instructions
1. – Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. – In a skillet over medium heat, cook the Italian sausage, breaking it up as it cooks, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
3. – In a medium bowl, mix the cooked sausage, chopped mushroom stems, cream cheese, parmesan, breadcrumbs, garlic, parsley, and red pepper flakes (if using). Season with salt and pepper to taste.
4. – Fill the mushroom caps evenly with the sausage mixture, pressing it in gently.
5. – Arrange the stuffed mushrooms on the prepared baking sheet.
6. – Bake for 18-20 minutes, or until the mushrooms are tender and the tops are golden brown.
7. – Serve warm and enjoy!
Notes
– For a creamier filling, add an extra 2 oz of cream cheese.
– Sprinkle with additional parmesan or chopped parsley before serving for extra flavor and presentation.
– These can be made ahead of time and baked just before serving.
