Ingredients
– 1 cup cornmeal
– 1/2 cup all-purpose flour
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1/4 cup unsalted butter, melted
– 3/4 cup milk
– 2 eggs
– 1/2 cup diced jalapeños (about 2-3 jalapeños)
Instructions
1. – Preheat your oven to 400°F (200°C). Grease a 24-cup mini muffin tin.
2. – In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
3. – In a separate bowl, whisk together the melted butter, milk, and eggs.
4. – Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in the diced jalapeños.
5. – Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
6. – Bake for 12-15 minutes, or until the cornbread bites are golden brown and a toothpick inserted into the center comes out clean.
7. – Allow the bites to cool in the tin for 5 minutes before transferring them to a wire rack.
8. – Serve warm, with a dipping sauce if desired. Enjoy!

– For a milder version, use fewer jalapeños or omit them entirely.
