Description

Ingredients

– 2 cups diced English cucumbers

– 1 cup shelled edamame

– 2 tablespoons lime juice

– 1 tablespoon olive oil

– 1 teaspoon red chili flakes

– 1/4 teaspoon salt

– 2 tablespoons chopped fresh cilantro (optional)


Instructions

1. – In a large bowl, combine the diced cucumbers and edamame.

2. – In a small bowl, whisk together the lime juice, olive oil, red chili flakes, and salt.

3. – Pour the dressing over the cucumber and edamame mixture and toss to coat evenly.

4. – Garnish with chopped fresh cilantro, if desired.

Notes

For a milder version, start with 1/2 teaspoon of red chili flakes and adjust to your desired level of spice. This salad can be made ahead of time and refrigerated for up to 3 days.
