Description

Spatchcock Turkey is a game-changing technique that results in a juicy, flavorful turkey with crispy skin every time. This easy recipe delivers a tender, moist turkey in just 2 hours, making it the perfect choice for your holiday feast.


Ingredients

– 1 (12-14 lb) whole turkey

– 2 tbsp kosher salt

– 1 tbsp black pepper

– 2 tbsp unsalted butter, softened

– 2 sprigs fresh rosemary

– 4 sprigs fresh thyme


Instructions

1. 1. Preheat oven to 450°F.

2. 2. Remove the turkey from the packaging and pat it dry thoroughly with paper towels.

3. 3. Use kitchen shears to cut along both sides of the backbone to remove it. Discard or save for another use.

4. 4. Flip the turkey over and press down firmly on the breastbone to flatten the turkey.

5. 5. Rub the turkey all over with the salt and pepper.

6. 6. Spread the softened butter over the entire surface of the turkey.

7. 7. Arrange the rosemary and thyme sprigs around the turkey.

8. 8. Roast the turkey for 1 hour, then reduce the oven temperature to 350°F and continue roasting for 45-60 minutes, until the thickest part of the breast reaches 165°F.

9. 9. Allow the turkey to rest for 20-30 minutes before carving and serving.

Notes

For a juicier turkey, brine the turkey in a saltwater solution for 12-24 hours before cooking. The spatchcock technique also works great for chicken.
