Description

Ingredients

– 3 lbs sweet potatoes, peeled and cubed

– 1/2 cup unsalted butter, melted

– 1/2 cup maple syrup

– 1/2 cup brown sugar

– 2 eggs, lightly beaten

– 1/2 cup milk

– 1 tsp ground cinnamon

– 1/2 tsp ground nutmeg

– 1/4 tsp salt


Instructions

1. – Preheat oven to 350°F. Grease a 9×13 inch baking dish.

2. – In a large pot, cover the sweet potato cubes with water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and mash the sweet potatoes.

3. – In a large bowl, combine the mashed sweet potatoes, melted butter, maple syrup, brown sugar, eggs, milk, cinnamon, nutmeg, and salt. Mix until well combined.

4. – Transfer the sweet potato mixture to the prepared baking dish and smooth the top.

5. – Bake for 30-35 minutes, or until the top is lightly golden and the casserole is heated through.

6. – Remove from oven and let cool for 5 minutes before serving. Enjoy!

Notes

For a crunchier topping, sprinkle the casserole with chopped pecans or a streusel topping before baking. This casserole can be made ahead and refrigerated until ready to bake.
