Ingredients
– 1 cup warm water
– 1 teaspoon active dry yeast
– 1 teaspoon sugar
– 2 1/2 cups all-purpose flour
– 1 teaspoon salt
– 1 cup chopped dill pickles, plus more for topping
Instructions
1. – In a large bowl, combine the warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
2. – Add the flour and salt to the yeast mixture and stir until a shaggy dough forms.
3. – Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until the dough is smooth and elastic.
4. – Place the dough in a lightly greased bowl, cover, and let rise for 1 hour or until doubled in size.
5. – Punch down the dough to release any air bubbles. Fold in the chopped pickles until evenly distributed.
6. – Shape the dough into a round loaf and place it on a parchment-lined baking sheet.
7. – Cover and let rise for 30 minutes.
8. – Preheat the oven to 400°F (200°C).
9. – Bake the bread for 25-30 minutes, until the crust is golden brown.
10. – Remove from the oven and let cool for 10 minutes before slicing and serving. Top with additional chopped pickles, if desired.
Notes
For a more pronounced pickle flavor, add an extra 1/2 cup of chopped pickles to the dough. This bread can be stored at room temperature for up to 3 days or frozen for up to 3 months.
