Description

A rich, creamy tomato bisque with tender chicken and a subtle smoky flavor, perfect for a cozy meal.

Ingredients

  • ? 1 pound cooked chicken, shredded or diced
  • ? 2 cans (14.5 oz each) diced tomatoes (with juices)
  • ? 1 medium onion, diced
  • ? 1 carrot, diced
  • ? 3 cloves garlic, minced
  • ? 1 teaspoon smoked paprika
  • ? Salt and pepper to taste
  • ? 4 cups chicken broth
  • ? 1 cup heavy cream (or coconut milk for a lighter option)
  • ? 1 tablespoon olive oil
  • ? Fresh basil or parsley for garnish (optional)

Instructions

1️⃣ Sauté Vegetables:
In a large pot, heat olive oil over medium heat. Add the diced onion and carrot, and sauté for about 5-7 minutes, until softened. Add the minced garlic and cook for an additional minute.

2️⃣ Add Tomatoes and Seasoning:
Stir in the diced tomatoes (with juices), smoked paprika, salt, and pepper. Cook for about 2-3 minutes, allowing the flavors to meld.

3️⃣ Add Broth and Chicken:
Pour in the chicken broth and add the cooked chicken. Bring the mixture to a simmer and cook for 10-15 minutes.

4️⃣ Blend the Soup:
Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.

5️⃣ Stir in Cream:
Return the blended soup to the pot (if using a regular blender) and stir in the heavy cream. Heat through over low heat until warmed, but do not boil.

6️⃣ Serve:
Ladle the bisque into bowls and garnish with fresh basil or parsley if desired. Enjoy your delicious Smoky Chicken Tomato Bisque! ?️✨
