Description

This Slow Cooker White Chicken Chili is a delicious, family-friendly meal that’s easy to prepare and packed with flavor. Tender chunks of chicken, creamy white beans, and a blend of spices come together in a rich, comforting chili that’s perfect for chilly nights.


Ingredients

– 1 lb boneless, skinless chicken breasts, diced

– 2 cans (15 oz each) white beans, drained and rinsed

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tsp ground cumin

– 1 tsp dried oregano

– 1 tsp chili powder

– 1/2 tsp ground coriander

– 1/4 tsp cayenne pepper (or to taste)

– 4 cups chicken broth

– 1 tsp salt

– 1/4 tsp black pepper

– Chopped fresh cilantro for garnish


Instructions

1. 1. In a slow cooker, combine the diced chicken, white beans, onion, garlic, cumin, oregano, chili powder, coriander, and cayenne pepper.

2. 2. Pour in the chicken broth and season with salt and black pepper.

3. 3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the flavors have melded.

Notes

– For a thicker chili, you can mash some of the beans against the side of the slow cooker towards the end of cooking.
