Description

Slow Cooker Corned Beef and Cabbage is a classic Irish-American dish that’s perfect for St. Patrick’s Day or any cozy dinner. The tender, flavorful corned beef and tender cabbage are simmered to perfection in the slow cooker, making this a hands-off, easy-to-prepare meal.


Ingredients

– 3-4 lb corned beef brisket

– 1 head green cabbage, cut into wedges

– 4 carrots, peeled and cut into 1-inch pieces

– 1 onion, diced

– 2 cloves garlic, minced

– 1 cup beef broth

– 2 bay leaves

– 1 tsp black pepper


Instructions

1. – Place the corned beef brisket in the slow cooker.

2. – Add the cabbage wedges, carrots, onion, and garlic around the corned beef.

3. – Pour the beef broth over the top and add the bay leaves and black pepper.

4. – Cover and cook on low for 8-10 hours, or until the corned beef is very tender.

5. – Remove the corned beef and slice or shred it.

6. – Serve the corned beef and cabbage mixture warm, garnished with fresh parsley if desired.

Notes

– For a more flavorful corned beef, try rubbing it with pickling spices before cooking.

– Add potatoes or other root vegetables to the slow cooker for a complete one-pot meal.
