Ingredients
– 1 large fennel bulb, thinly sliced
– 3 oranges, peeled and segmented
– 2 tablespoons extra-virgin olive oil
– 1 tablespoon white wine vinegar
– 1 teaspoon Dijon mustard
– 1 clove garlic, minced
– Salt and freshly ground black pepper to taste
– 2 tablespoons chopped fresh parsley
Instructions
1. – In a large bowl, combine the sliced fennel and orange segments.
2. – In a small bowl, whisk together the olive oil, vinegar, Dijon mustard, and garlic. Season with salt and pepper to taste.
3. – Drizzle the dressing over the fennel and oranges, and gently toss to coat.
4. – Sprinkle the chopped parsley over the salad and serve immediately.
Notes
For a heartier meal, you can add grilled chicken or shrimp to the salad. The salad can also be made ahead of time and refrigerated until ready to serve.
