Ingredients

– 1 lb large shrimp, peeled and deveined

– 4 cups chicken or vegetable broth

– 1 cup stone-ground grits

– 2 tbsp butter

– 1 cup heavy cream

– 1 tbsp Cajun seasoning

– 2 scallions, chopped

– Salt and pepper to taste


Instructions

1. 1. In a medium saucepan, bring the broth to a boil over high heat. Slowly whisk in the grits, reduce heat to low, and cook, stirring frequently, until the grits are thick and creamy, about 20 minutes.

2. 2. In a large skillet, melt the butter over medium-high heat. Add the shrimp and Cajun seasoning, and sauté until the shrimp are pink and cooked through, about 5 minutes.

3. 3. Stir the heavy cream into the grits and cook for an additional 5 minutes, stirring constantly, until the mixture is smooth and creamy.

4. 4. Serve the shrimp over the Cajun-style grits, garnished with chopped scallions. Season with salt and pepper to taste.

Notes

For extra flavor, you can add diced onions, bell peppers, or garlic to the shrimp sauté. If the grits become too thick, thin them out with a bit of extra broth or cream.
