Ingredients

– 12 large tortillas

– 3 cups shredded Mexican cheese blend

– 1 red bell pepper, diced

– 1 green bell pepper, diced

– 1 onion, diced

– 1 tablespoon olive oil

– 1 teaspoon ground cumin

– 1/2 teaspoon garlic powder

– 1/2 teaspoon chili powder

– Salt and pepper to taste


Instructions

1. 1. Preheat your oven to 400°F (200°C).

2. 2. In a large bowl, combine the diced bell peppers and onion. Drizzle with olive oil and season with cumin, garlic powder, chili powder, salt, and pepper. Toss to coat.

3. 3. Arrange 6 tortillas in a single layer on a large baking sheet. Sprinkle each tortilla evenly with the vegetable mixture and top with shredded cheese.

4. 4. Place the remaining 6 tortillas on top to create quesadillas.
