Description

This Shaved Asparagus & Fennel Salad is a vibrant, flavorful dish that’s perfect for a light lunch or as a side. Thinly shaved asparagus and fennel are tossed in a tangy vinaigrette for a crisp, refreshing salad.


Ingredients

– 1 lb asparagus, shaved into thin strips

– 1 fennel bulb, shaved into thin strips

– 2 tbsp olive oil

– 2 tbsp lemon juice

– 1 tsp Dijon mustard

– 1 tbsp honey

– Salt and pepper to taste

– Lemon zest and chopped parsley for garnish


Instructions

1. – Shave the asparagus and fennel into thin strips using a vegetable peeler or mandoline.

2. – In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and honey. Season with salt and pepper.

3. – Add the shaved asparagus and fennel to a large bowl. Pour the dressing over the top and toss to coat evenly.

4. – Garnish the salad with lemon zest and chopped parsley.

Notes

This salad is best served immediately for maximum crispness. For a heartier meal, you can add grilled chicken or roasted chickpeas. The shaved vegetables can also be prepped ahead of time and refrigerated until ready to assemble.
