Ingredients
– 6 oz high-quality dark chocolate
– 1/2 cup unsalted butter, cubed
– 3 large eggs
– 3 large egg yolks
– 1/3 cup granulated sugar
– 2 tbsp all-purpose flour
Instructions
1. – Preheat oven to 450°F. Grease four 6-oz ramekins and place on a baking sheet.
2. – In a medium bowl, microwave the chocolate and butter in 30-second intervals, stirring between each, until melted and smooth.
3. – In a separate bowl, whisk the eggs, egg yolks, and sugar until light and fluffy, about 2-3 minutes.
4. – Gently fold the egg mixture into the melted chocolate mixture until just combined. Fold in the flour until no dry pockets remain.
5. – Divide the batter evenly among the prepared ramekins. Bake for 8-10 minutes, until the edges are set but the centers are still soft.
6. – Let the cakes rest for 1 minute, then run a knife around the edges and invert onto plates. Serve immediately.
