Description

Ingredients

– 1 package phyllo dough, thawed

– 10 oz fresh spinach, chopped

– 8 oz crumbled feta cheese

– 3 eggs, beaten

– 1/4 cup olive oil

– 1 tsp dried oregano

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. 1. Preheat the oven to 375°F (190°C).

2. 2. Unroll the phyllo dough and lay one sheet flat on a clean surface. Brush with olive oil.

3. 3. Layer another sheet of phyllo on top and brush with olive oil. Repeat with 6 more sheets, for a total of 8 layers.

4. 4. In a bowl, mix together the chopped spinach, crumbled feta, beaten eggs, oregano, salt, and pepper.

5. 5. Spread the spinach and feta mixture evenly over the phyllo layers, leaving a 1-inch border.

6. 6. Carefully roll up the phyllo dough, starting from the short side, to create a spiral.

7. 7. Transfer the spiral to a baking sheet lined with parchment paper.

8. 8. Bake for 30-35 minutes, or until the crust is golden brown.

9. 9. Let cool for 10 minutes, then slice and serve.

Notes

– For a crisper crust, brush the top of the spiral with additional olive oil before baking.

– Experiment with different cheese varieties, such as ricotta or goat cheese, to customize the flavor.
