Description

This Sausage Potato Soup is a comforting, creamy, and easy-to-make one-pot meal that’s ready in just 30 minutes. Tender chunks of potato and savory sausage in a rich, velvety broth make this soup a family favorite.


Ingredients

– 1 lb. Italian sausage, casings removed

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 3 medium potatoes, peeled and cubed

– 1 cup heavy cream

– 1 tsp. dried thyme

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. 1. In a large pot or Dutch oven, cook the sausage over medium heat, breaking it up as it cooks, until browned and cooked through, about 5-7 minutes.

2. 2. Add the onion and garlic to the pot and cook for 2-3 minutes until fragrant.

3. 3. Pour in the chicken broth and add the cubed potatoes. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.

4. 4. Stir in the heavy cream and dried thyme. Season with salt and pepper to taste.

5. 5. Serve the soup hot, garnished with chopped fresh parsley.

Notes

For extra flavor, you can use spicy Italian sausage. This soup also freezes well for up to 3 months.
